SPICY ROASTED CASSAVA CHUNKS

These spicy roasted cassava chunks are and ideal snack on busy evenings or weeknights. Enjoy with a yoghurt dip or a tangy tamarind sauce for a kick.

INGREDIENTS:
  • 1 kg Surya Cassava (also known as Yuca)
  • 3 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp chilli powder
  • 1/2 tsp turmeric
  • 1/2 tsp garlic powder
  • 1/2 tsp salt, adjust to taste
  • 1/4 tsp black pepper
  • Fresh coriander leaves for garnish (optional)
  • Lime wedges for serving (optional)
METHOD:
  • Preheat your oven to 200°C (390°F).
  • Place the cassava chunks in a large pot of salted boiling water. Cook for about 15 minutes until the cassava is tender but still firm. Drain the water and let the cassava cool slightly.
  • In a large mixing bowl, combine olive oil, paprika, ground cumin, chilli powder, turmeric, garlic powder, salt, and black pepper.
  • Toss the cooled cassava chunks in the spice mixture until evenly coated.
  • Spread the seasoned cassava chunks on a baking tray in a single layer. Roast in the preheated oven for 20–25 minutes, turning halfway through, until the cassava is golden brown and crispy on the edges.
  • Garnish with fresh coriander leaves and serve with lime wedges on the side.
