KURKURI BHINDI (CRISPY OKRA)

Kurkuri bhindi is a delicious South-Asian side dish that is likely to become a favourite for anyone trying it. The crunchiness of fried okra dusted with traditional spices, pairs perfectly with dal chawal for a wholesome meal!

INGREDIENTS:
  • 200g Surya Whole Okra
  • 100g Gram flour
  • A pinch of Turmeric powder
  • ΒΌ tsp Red chilli powder
  • Salt to taste
  • A pinch of baking soda
  • 2 tsp Coriander powder
  • 1/4th tsp Amchur powder
METHOD:
  • In a large mixing bowl, add the gram flour, turmeric, red chilli powder, salt, baking soda, 1 tsp coriander powder and mix well.
  • Add frozen okra into this mixture and coat well.
  • In a large frying pan, add sunflower oil and bring to heat. Once hot, drop a piece of the battered okra in to check if the oil is ready for frying. The okra should sizzle, add in more pieces allowing adequate space in between.
  • Fry the okra for 2 minutes with occasional stirring. Once crispy and cooked through, remove the okra using a skimmer spoon and place onto kitchen roll to drain off the excess oil.
  • Dust the remaining coriander powder and amchur powder over the crispy okra, mix lightly and enjoy.
